Despite the crazy past week, I still managed to lose 2.5lbs. I was pretty upset by this low number especially since the first week I kicked some major butt. It all started last Sunday. Cravings for crap food crept in and I did pretty good although I did manage to fit a fruit snack into my calories for the day. Monday and Tuesday were filled with healthy choices however on Tuesday I went over my calories. I was so upset with myself. There were even tears. Those who know me know I can cry over ridiculous stuff so this is nothing new. Wednesday I had dinner with friends at Granite City. I had a yummy southwestern salad with chicken. GC doesn't have fat free or low fat salad dressing of ANY kind, who would have thought that?
Thursday...Thursday is a day that will change my hubs and I in so many ways with the arrival of little man and our splurge on pizza for dinner. It seemed as though we had broken the ice on eating crap food and we were free do it the rest of the weekend. So Friday I met up with hubs and little man at Wendy's. I could have had a salad but instead I chose chicken nuggets and french fries. In my defense I did share both things with hubs and little man. I had leftover pizza for dinner and then for lunch on Saturday.
Yesterday was little man's 3rd birthday so we threw him a party filled with pizza, cake, ice cream and balloons. He looked so happy and was so excited the whole time. We are so grateful for our family's generosity. He made out like a bandit, which is surprising because I said no gifts... :)

Tonight is the big weigh in and I am scared to do so. The last couple of days have been tough. We have a special little visitor staying with us for the foreseeable future and yesterday was his first day with us. We decided to celebrate and order pizza. Thankfully I stayed with my calories! Today we also decided to eat out in between his appointments and had Wendy's. Instead of a somewhat healthy salad, I had chicken nuggets and some french fries. Ironically I feel nauseous, I think my body was adjusting to the healthy food trend and this crap food is making me not feel good.
I have received my 20lb reward although I can't have/wear it until I reach my goal. Hopefully that will be tonight or soon.
I am so excited to have little man with us and can't wait for all the fun we are going to have. We might have to pick up a stroller so we can take him and the dog for walks after dinner. It's weird having this little soul around, I like it. His laughter is contagious and I love how his little voice fills up the silence. I wonder if running around chasing a toddler will count on Spark People as exercise... haha

Bacon and Onion Frittatas = Easy and Delicious
Bacon and Onion Frittata
Ingredients:
6 eggs (or equivalent)
1/2 c bacon (crumbled)
1/2 c reduced fat cheese (shredded)
1/2 c onion
Salt & Pepper to taste
Directions:
Preheat over to 350 degrees. Line or lightly spray muffin pan.
In a bowl mix eggs until fluffy. Once fluffy add remaining ingredients and mix.
Pour mixture evenly into muffin pan slots. Bake for 18-20 minutes.
Makes 12 normal cupcakes or 6 large cupcakes.
Serving size is 2 normal cupcakes or 1 large cupcake

Yesterday while at Target, I spotted some Hungry Girl cookbooks. I proceeded to flip through the pages and fell in love with what I saw so I bought 2 of the 3 books. There are so many wonderful recipes in there! Oh and easy recipes like things to make in mugs. I can not wait to start testing them out.
I have a somewhat important problem. I am way under my calories every day. The last couple of days I had been averaging 1000 calories which is 200-550 calories less then I should be eating every day. I know that eating so little calories can't be good yet, I'm not hungry. So do I make myself eat something when I'm not hungry or do I leave everything as is? Recipes from the past couple of days
Red Beans and Rice with Sausage
Ingredients:
2 tbsp olive oil
1 pound fully cooked smoked sausage, cut bite size pieces
1/2 large onion
1/2 c red bell pepper
4 garlic cloves, chopped
2 cans of red kidney beans
1 c low salt, 99% fat free chicken broth
1 tsp creole seasoning
Directions:
Heat olive oil in large skillet over medium heat. Add sausage, onion, pepper, and garlic and saute until onion is brown; about 15 minutes. Mix in kidney beans with their juices, broth and Creole seasoning. Reduce heat to medium-low; cover and simmer until flavors are blended and mixture is very thick, stirring occasionally, about 45 minutes.
Spoon mixture over cooked rice or for a lower carb option, eat as is.
Makes 8 servings of 3/4 cup each.

I made some changes to this because we were missing a couple of ingredients and needed to use some other things up. I used a chicken sausage from Target (can't remember the flavor), one can of black beans (rinsed) and one can of kidney beans, sugar snap peas instead of the peppers and Italian seasoning instead of the creole seasoning. It was fantastic! Probably one of the best things I've ever made/had. It tasted just as wonderful as seconds too.
Garlic and Herb Pasta with Bacon and Asparagus
Ingredients:
3 slices bacon, chopped
1 tsp olive oil
1 garlic clove, minced
1 shallot, minced
8 asparagus spears, cut into 1 inch pieces
6 oz. dried wheat pasta of your choice (I used Penne Rigate)
3 wedges Laughing Cow Light Garlic Herb cheese
kosher salt and fresh cracked pepper to taste
Directions:
Start a pot of water for your pasta. In a large skillet, cook bacon over medium heat until it crisps up, about 5-7 minutes. Transfer to paper towel lined plate and set aside. Reserve 2 tsp of pan drippings. Once your pasta water starts boiling, cook pasta according to package directions. Drain. Put cut asparagus into a microwave safe bowl with 1-2 teaspoons of water, and microwave for about 2 minutes. Set aside. Meanwhile, in the same skillet you cooked the bacon in, add 1 teaspoon olive oil. Stir in garlic and shallots. Cook just until softened about 3 minutes. Stir in asparagus, cook 1 minute. Stir in cooked pasta. Stir in herb and garlic cheese. As the cheese melts, stir to lightly coat the pasta. Stir in bacon. Season with salt and pepper to taste. Top with some shredded parmesan and serve!

I made my first weight loss milestone. I lost 11lbs in a week!! I am over the moon and I can't wait to keep it going. It has given me so much motivation to keep moving forward. If only every week here on out would be this easy :)
I did cheat a little last night and I had a package of fruit snacks. However I feel this allowed since I avoided having cupcakes at my father-in-laws birthday party and I was still under all my allowances for the day.
It's a little odd but the first place I've noticed the weight loss is in my fingers. They are starting to look skinnier which is funny because that is the last place I was expecting to see smaller. Hopefully everything else follows suit!

Sweet, sweet Friday, so far you have proven to be a great day! Life is changing all around me and I welcome it with open arms. I've finally (after a month of nail biting!) been approved and excepted as an agent for the top company in my field. Since I've started in the industry this has always been my main goal and it's finally here!
Now if only I can get to my other goal(s)..I'm starting to think this whole losing weight thing is going to be a walk in the park although, I do know I have some major challenges ahead.
Last night I made probably one of the most delicious things I've ever had. I seriously could have eaten the whole pan. It was called Red Beans and Rice with Sausage. It consisted of a handful of ingredients and yet turned out so yummy. I can't wait to have it again for supper tonight!
I'm planning on doing a weigh in tonight to see if I've lost anything. I'm hoping and praying the number on the scale is smaller. I've been putting this off since I am terrified of the scale. I'm ashamed of what I've become and done to my body. I've always been bigger, taller, etc.. but that is no excuse for the out of controlness that has come over me.
But today is a day of celebration and I want to end on a happy note which came from my husband. He told me how proud of me he is, which I have never heard him say before but made me feel amazing and I too am proud of myself. :)

Day 6 Recipes
Banana Chocolate Chip Muffins
Ingredients:
1 c bananas, mashed (roughly 2.5 medium bananas)
1 large egg
1/2 c applesauce
1 tbsp stevia or 1/2 c splenda
1 c whole wheat flour
1 cup regular flower
1/4 c milk (skim or 1 %)
1/4 tsp vanilla extract
2 tsp baking powder
3 tbsp semi-sweet mini chocolate chips*
Directions:
Mix all ingredients in a large bowl. Fill 16 muffin tins or papers about halfway.
Bake @ 350 degrees for 20 minutes.
Makes 16 servings.

**These have an interesting consistency and would almost taste better with other fruits mixed in instead of the chocolate chips. They are pretty decent although next time I will change a couple of things up a bit.

4 c shredded cabbage
1 c mushrooms, sliced
1 c carrots, shredded
2 tbsp cilantro, chopped
1 cucumber, thinly sliced
3 green onions, thinly sliced
1 mandarin orange, divided into sections
1/2 c Asian salad dressing
Black pepper to taste
Directions:
In a large bowl combine chicken, cabbage, mushrooms, carrots, cilantro, cucumber and dressing. Toss well. Top with green onions and mandarin oranges. Pepper to taste.
Serves 4

Wonderful Stuffed Potatoes
Ingredients:
4 medium baking potatoes
3/4 c low fat cottage cheese
1/4 c skim milk
2 tbsp sodt margarine
1 tsp dill weed
3/4 tsp herb seasoning
4-6 drops hot sauce
2 tsp grated parmesan cheese
Directions:
Prick potatoes with fork and bake at 425 degrees for 60 minutes or until fork is easily inserted. Cut potatoes in half length wise. Carefully scoop out potato leaving 1/2 inch of pulp inside shell. Mash pulp in a large bowl. Mix in by hand remaining ingredients except parmesan cheese. Spoon mixture in to potato shells. Sprinkle each with 1/4 tsp parmesan cheese. Place on a baking sheet and return to oven. Bake 15-20 minutes or until tops are golden brown.
Serving size: 1/2 potato each, 8 servings

It's been a WEEK! I haven't weighed myself yet but I can tell the difference in my pants. The pairs that were starting to feel a little tight are now fitting just right or even a little looser. As strange as it sounds, I honestly think my body is responding to the change and maybe that's because my head is into this time. Things that normally wouldn't upset my stomach are starting too. I'm eating smaller portions and feeling full before my meal is finished. I had a diet pepsi the other day (after 3 days of only drinking water) and I thought I was going to get sick however I had a diet coke the last two days and didn't have a problem.
Yesterday I felt like I ate a ton of food however I was way under on my calories. I will post the recipes separately but here is what I had to eat yesterday. Yogurt (Aldi special, light of course), a Banana Chocolate Chip Muffin, 27 almonds, Asian Chicken Salad, 1 oz Jack Links Teriyaki Beef Jerky, Brown Sugar Garlic Chicken (super yummy!), Wonderfully Stuffed Potatoes (didn't quite turn out stuffed so I made them into mashed) and Orange Dreamsicle Delight. All of this was roughly 1000 calories which is 200-550 less then I am suppose to have. The portions on some of it were HUGE too.
I've noticed I haven't been drinking as much water as I was a couple of days ago so I need to keep working on that but seriously the stuff is gross. I haven't done too much working out but now that I'm starting week 2 that will be my focus more so then the food. If I sit and figure things out in advance it will be easier to resist the temptations.
I've made the announcement on FB so I can't back out now lol. Besides have you seen my rewards!! If that isn't enough to motivate me along with the other benefits of losing weight, there really isn't any hope for me lol. I also have to get in beach body shape for our trip to Jamaica next year. Happy Monday! Surprisingly the weekend went much better then I expected. Friday we had dinner at Olive Garden with four other couples (and their children) from our PS-MAPP (adoption/foster care course). This was our first big challenge and we did amazingly! I did some research before we got there so when it came time to order I knew exactly what I was having. I had the Grilled Chicken Spiedini with grilled veggies and steamed broccoli. I even allowed myself a tiny little salad with their peppercorn and parmesan ranch dressing. It was fantastic!
Saturday's breakfast was my standard Fiber One cereal with a mid morning snack consisting of Arbor Farm's Caramel Apple yogurt and a serving of almonds. For lunch I made brown rice and sauteed veggies for a little stir fry. I added some cumin and garlic & herb seasoning to the veggies with splash of soy sauce to the rice. We had some grape salad too. My husband HATES brown rice and stir fry in general and liked it enough to have it again. Come dinner time I was exhausted so I had cereal again. Bad choice, I was still hungry an hour later so I had some baked beans.
Sunday proved to be another wonderful day. Breakfast once again was some Fiber One cereal with a mid morning Yoplait Light yogurt. For lunch I had some brown rice, white sweet corn and black beans seasoned with garlic and cumin. I topped that off with tablespoon of fat free sour cream and pinch of low fat mozzarella cheese. For dinner I made a grilled pb&j with some grape salad. The pb&j was so yummy.
All in all a good weekend. Didn't even come close to going over my allowed limit of calories. I have to admit, I'm pretty proud of myself :)

Day 1 Dinner Recipe
So for dinner last night I wanted something quick and easy as well as low calorie and low fat. I found this recipes of the SparkPeople website for Grilled Cheese Pizza Sandwich. The hubs was actually on board with my choice and even helped make it as I made Hutto Grape Salad.
Grilled Cheese Pizza Sandwich
Ingredients
2 slices mixed grain bread
2 tbsps marinara sauce
1/4 c mozzarella cheese (low moisture, part skim)
1 tsp shredded parmesan
Salt and pepper to taste
Directions
Spread 1 tbsp of the marinara sauce on each piece of bread. Spread mozzarella cheese evenly on side with sauce on first piece of bread. Sprinkle parmesan cheese over mozzarella. Top with second piece of bread sauce side down. Place in a heated pan and cook until cheese inside is melted and bread is golden brown. Makes one (1) serving

Hutto Grape Salad
Ingredients
1 pkg green grapes
1 pkg red grapes (seedless)
1 pkg 8 oz cream cheese (I used fat free)
1 c sour cream (I used fat free here as well)
1/2 c sugar
1 sm pkg chopped pecans
Cinnamon
Brown Sugar
Directions
Preheat oven to 350 degrees
In a large bowl mix cream cheese, sour cream and sugar together until well blend. While that is mixing spread pecans on a cookie sheet. Sprinkle brown sugar and cinnamon over pecans. Put in oven and toast (I had mine in there for 7 minutes). Once cream cheese/sour cream mixture is well blended add grapes. Hand mix grapes into mixture. Add more grapes if there is an abundance of mixture coating the grapes.
Sprinkle mixture/grapes with the toasted pecan mixture. Serve and enjoy!

And if you go in, should you turn left or right…or right-and-three-quarters? Or, maybe, not quite? Or go around back and sneak in from behind? Simple it’s not, I’m afraid you will find, for a mind-maker-upper to make up his mind.
You can get so confused that you’ll start in to race down long wiggled roads at a break-necking pace and grind on for miles across weirdish wild space, headed, I fear, toward a most useless place.
The Waiting Place…for people just waiting.
Waiting for a train to go or a bus to come, or a plane to go or the mail to come, or the rain to go or the phone to ring, or the snow to snow or waiting around for a Yes or No or waiting for their hair to grow. Everyone is just waiting.
Waiting for the fish to bite or waiting for wind to fly a kite or waiting around for Friday night or waiting, perhaps, for their Uncle Jake or a pot to boil, or a Better Break or a string of pearls, or a pair of pants or a wig with curls, or Another Chance. Everyone is just waiting.
No! That’s not for you!
Somehow you’ll escape all that waiting and staying. You’ll find the bright places where Boom Bands are playing. With banner flip-flapping, once more you’ll ride high! Ready for anything under the sky. Ready because you’re that kind of a guy!
Oh, the places you’ll go! There is fun to be done! There are points to be scored. There are games to be won. And the magical things you can do with that ball will make you the winning-est winner of all. Fame! You’ll be famous as famous can be, with the whole wide world watching you win on TV.

I’m afraid that some times you’ll play lonely games too. Games you can’t win ‘cause you’ll play against you.

And when you’re alone, there’s a very good chance you’ll meet things that scare you right out of your pants. There are some, down the road between hither and yon, that can scare you so much you won’t want to go on.

Onward up many a frightening creek, though your arms may get sore and your sneakers may leak. On and on you will hike. And I know you’ll hike far and face up to your problems whatever they are.

Step with care and great tact and remember that Life’s a Great Balancing Act. Just never forget to be dexterous and deft. And never mix up your right foot with your left.

Day 1
This not so skinny girl is ready for the biggest adventure of her life. And like everything else in her world there is guaranteed to be bumps along the way. I could say that the goal is to lose a massive amount of weight but that is start of all the good things that should come my way. I've never been skinny or thin and coming from a family of thin model like people has been more discouraging then encouraging. It's easy to tell someone to diet, cut back, etc.. but to actually do it is another.
I was somewhat active growing up and didn't really eat bad foods until I moved out of my parent's house yet I was always bigger then everyone else. Once I moved out of my parent's house I lost quite a it of weight. I'll credit it to being in a new relationship and the fun we had. ;) Sadly as our relationship progressed so did my waistline and every other line of my body for that matter.
I'm the heaviest I have ever been and/or hope to be. The ironic thing is I have fluctuated between this clothing size and another size for the past 3 years but I am significantly heavier then I was 3 years ago. Which baffles me.
I love food just not the right foods. I gag when I have to drink water for purposes other then when I'm doing something physical. I also don't really care for fruit. The taste and texture of some fruits just aren't good to me. I also think it's partly because I'm lazy and it's easier to grab a bag of chips, a cookie, etc.., cut up an orange or strawberries.
But all this is about to change! Nobody says it better then Dr. Seuss...
